Ginger has very specific aromatherapy uses that are quite different from culinary and other medicinal uses. For instance, ginger is regarded as an aid to recovering memory. It is, of course, stimulating, but it is also grounding. It is anti-inflammatory and has pain relieving properties.
Unlike steam distilled ginger, CO2 extracts smell much more like culinary ginger. The aroma is rich but the extract must be used sparingly since it is very concentrated. Since the same chemicals are present in the extract as in spice we are accustomed to using in tea and savory dishes, you can use this extract as flavoring, but add it one drop at a time lest you add too much.
Ginger blends well with other spices as well as with frankincense, lemon, and peppermint and even tea tree.
